Ingredients
For the Cheese Sticks:
- 12 mozzarella string cheese sticks (or a block of mozzarella, cut into sticks)

- 2 large eggs
- 2 tbsp milk
- 1 ½ cups breadcrumbs (Italian seasoned or plain)

Instructions
1. Prepare the Cheese Sticks
- If using string cheese, cut each stick in half. If using a block of mozzarella, cut it into 3-inch by ½-inch sticks.
- Place the cheese sticks on a baking sheet lined with parchment paper and freeze for at least 1 hour. This prevents them from melting too quickly during frying.
2. Set Up the Breading Station
- In one shallow bowl, place the flour.
- In a second shallow bowl, whisk together the eggs and milk.
- In a third shallow bowl, mix breadcrumbs, Parmesan cheese (if using), garlic powder, paprika, salt, and black pepper.
3. Bread the Cheese Sticks
- Coat each frozen cheese stick in flour, shaking off the excess.
- Dip it into the egg mixture, ensuring it’s fully coated.
- Roll it in the breadcrumb mixture, pressing gently to adhere.
- For an extra-crispy coating, repeat the egg and breadcrumb steps.
4. Freeze Again
- Place the breaded cheese sticks back on the baking sheet and freeze for another 30 minutes. This helps the coating stay intact during frying.
5. Fry the Cheese Sticks
- Heat about 2 inches of vegetable oil in a deep skillet or saucepan to 350°F (175°C).
- Fry the cheese sticks in small batches for 1-2 minutes, or until golden brown. Avoid overcrowding the pan.
- Remove with a slotted spoon and place on a paper towel-lined plate to drain excess oil.
6. Serve
- Serve immediately with marinara sauce, ranch dressing, or your favorite dip.
Tips
- Freezing: Don’t skip the freezing steps; it’s essential to keep the cheese from oozing out while frying.
- Baking Option: For a healthier version, bake the cheese sticks at 400°F (200°C) for 8-10 minutes, flipping halfway through. Use cooking spray to help them crisp up.
- Air Fryer Option: Cook in a preheated air fryer at 375°F (190°C) for 6-8 minutes, shaking the basket halfway through.
