Cake
- - 2 cups all-purpose flour
- 2 cups granulated sugar
- ¾ cup unsweetened cocoa powder
- 2 tsp baking powder
- 1 ½ tsp baking soda
- 1 tsp salt
- 1 tsp espresso powder (optional)
- 1 cup whole milk
- ½ cup vegetable oil
- 2 large eggs
- 2 tsp vanilla extract
- 1 cup boiling water
Frosting
- 1 ½ cups unsalted butter, softened
- 4 cups powdered sugar
- 1 cup unsweetened cocoa powder
- ½ cup heavy cream
- 2 tsp vanilla extract
- A pinch of salt
Instructions:
1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
2. Mix Dry Ingredients: In a large bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, salt, and espresso powder.
3. Add Wet Ingredients: Add the milk, vegetable oil, eggs, and vanilla extract to the dry ingredients. Mix until well combined.
4. Add Boiling Water: Stir in the boiling water. The batter will be thin, but that's okay.
5. Bake the Cakes: Divide the batter evenly between the prepared pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove them to wire racks to cool completely.
6. Prepare the Frosting: In a large bowl, beat the butter until creamy. Gradually add the powdered sugar and cocoa powder, beating until smooth. Beat in the heavy cream, vanilla extract, and salt until the frosting is light and fluffy.
7. Assemble the Cake: Place one cake layer on a serving plate. Spread a generous layer of frosting on top. Place the second cake layer on top and frost the top and sides of the cake. Decorate as desired with chocolate shavings, sprinkles, or fruit.
