Crockpot Beef Tips & Noodles

Ingredients:

  • 2 lbs beef stew meat or sirloin tips, cut into bite-sized pieces
  • 1 packet (1 oz) onion soup mix
  • 2 cups beef broth
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 small onion, finely chopped (optional)
  • 2 cloves garlic, minced
  • 1 tbsp Worcestershire sauce
  • 1 tsp paprika
  • 1/2 tsp black pepper
  • 1/2 tsp salt (adjust to taste)
  • 1 tbsp cornstarch + 2 tbsp water (for thickening, optional)
  • 12 oz egg noodles
  • Fresh parsley, chopped (for garnish)
Instructions:
  1. Prepare the Crockpot:

    • Place the beef tips in the crockpot.
    • Add the onion soup mix, beef broth, cream of mushroom soup, chopped onion (if using), garlic, Worcestershire sauce, paprika, salt, and pepper. Stir to combine.
  2. Cook:

    • Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the beef is tender.
  3. Thicken the Sauce (Optional):

    • If you want a thicker sauce, mix the cornstarch and water in a small bowl to create a slurry.
    • Stir the slurry into the crockpot during the last 30 minutes of cooking. Let it cook until the sauce thickens.
  4. Cook the Noodles:

    • About 15 minutes before serving, cook the egg noodles according to the package instructions. Drain and set aside.
  5. Combine and Serve:

    • Serve the beef tips and gravy over the cooked egg noodles. Garnish with fresh parsley if desired.
Tips:
  • For extra flavor, sear the beef in a hot skillet with a bit of oil before adding it to the crockpot.
  • Add mushrooms or carrots for more vegetables.
  • Leftovers can be stored in an airtight container in the fridge for up to 3 days.
