Ingredients:
- 4 eggs
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1/4 cup powdered sugar
- 1 cup whipped cream
- 1 cup sliced strawberries
Instructions:
- Preheat oven to 375°F (190°C) and line a 10x15-inch jelly roll pan with parchment paper.
- In a large bowl, beat eggs, granulated sugar, and vanilla extract until light and fluffy.
- In a separate bowl, sift together flour, baking powder, and salt. Gently fold into the egg mixture until well combined.
- Pour batter into the prepared pan and spread evenly. Bake for 10-12 minutes or until the cake springs back when touched.
- While the cake is still warm, sprinkle powdered sugar on top and invert onto a clean kitchen towel. Carefully roll the cake with the towel from short end to short end and let cool completely.
- Unroll the cake and spread whipped cream over the surface. Top with sliced strawberries.
- Roll the cake back up without the towel. Chill in the refrigerator for at least 1 hour before serving.
