Ingredients:
- 2 fresh fish fillets (such as salmon or tilapia)
- 2 tablespoons olive oil
- 1 lemon (juiced)
- 2 cloves garlic (minced)
- Salt and pepper to taste
- 1 teaspoon dried herbs (like thyme or oregano)
- 4 medium potatoes (for fries)
- Vegetable oil (for frying)
- Fresh parsley (for garnish)
Instructions:
Start by marinating the fish. In a bowl, mix olive oil, lemon juice, minced garlic, salt, pepper, and dried herbs. Place the fish fillets in the marinade and let them sit for at least 30 minutes.
While the fish is marinating, prepare the fries. Peel the potatoes and cut them into thin strips. Rinse them in cold water to remove excess starch, then pat them dry with a towel.
Heat vegetable oil in a deep pan over medium heat. Once hot, carefully add the potato strips in batches, frying until they are golden brown and crispy. This should take about 5-7 minutes. Remove the fries and place them on paper towels to drain excess oil.
Preheat your grill or grill pan over medium-high heat. Once hot, place the marinated fish fillets on the grill. Cook for about 4-5 minutes on each side, or until the fish flakes easily with a fork.
Serve the grilled fish alongside the crispy fries. Garnish with fresh parsley and a wedge of lemon for an extra touch.
