- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1 1/2 tsp baking powder
- 1 tsp baking soda
- 1/2 tsp salt
- 2 large eggs
- 1 cup buttermilk
- 1/2 cup vegetable oil
- 2 tsp vanilla extract
- 1 cup boiling water
- 1 jar (24 oz) dark cherries in syrup
- 2 cups heavy cream
- 2 tbsp powdered sugar
- 1 tsp vanilla extract
- Dark chocolate shavings or curls
Instructions:
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch cake pans
- In a bowl, mix flour , sugar , cocoa powder , baking powder , baking soda , and salt
- Add eggs , buttermilk , oil , and vanilla extract . Mix until smooth
- Gradually add boiling water , mixing until thin batter forms
- Pour the batter into prepared pans and bake for 30-35 minutes, or until a toothpick comes out clean
- Let the cakes cool completely
- Whip heavy cream , powdered sugar , and vanilla extract to soft peaks
- Slice the cakes in half horizontally. Layer with whipped cream, cherries , and more cream in between
- Frost the outside of the cake with whipped cream and decorate with chocolate shavings and extra cherries
